Bamboo Shoot Soup (竹笋汤) is a light, refreshing, and nutritious dish popular in many Asian cuisines, particularly Chinese, Japanese, Korean, and Southeast Asian cooking. Bamboo shoots have a delicate, slightly sweet flavor and a crisp texture. Here’s a simple and delicious recipe:









Ingredients:
- 200g fresh or canned bamboo shoots (sliced or shredded)
- 100g pork (or chicken, shrimp, or tofu for vegetarian option)
- 4-5 cups chicken or vegetable broth
- 1-2 cloves garlic (minced)
- 1 small piece ginger (sliced)
- 1-2 green onions (chopped)
- 1 tsp soy sauce (or fish sauce)
- Salt & white pepper to taste
- 1 tsp sesame oil (optional)
- Some mushrooms (shiitake or enoki, optional)
- 1 small chili (optional, for spice)
Instructions:

Prepare Bamboo Shoots:
- If using fresh bamboo shoots, boil them first for 10-15 minutes to remove bitterness.
- If using canned bamboo shoots, rinse well and drain.
- Cook the Meat (Optional):
- Thinly slice pork/chicken and lightly marinate with soy sauce, pepper, and a little cornstarch (for tenderness).
- Sauté garlic and ginger in a pot with a little oil, then add the meat and cook until no longer pink.
- Add the broth and bring to a boil.
- Add bamboo shoots and mushrooms (if using), simmer for 10-15 minutes on medium heat.
- Season with soy sauce, salt, and white pepper to taste.
- Add green onions and a drizzle of sesame oil before turning off the heat.
- Serve hot with steamed rice or enjoy as a light soup.
