Stir-fried bamboo shoots are a classic Chinese dish known for their crisp texture and light, refreshing taste. They can be prepared simply with garlic and seasonings or paired with meat for extra flavor. Here’s a basic recipe:

Ingredients:

  • 300g fresh or canned bamboo shoots (sliced)
  • 2 cloves garlic (minced)
  • 1-2 dried chili peppers (optional, for spice)
  • 1 tbsp soy sauce
  • 1/2 tsp sugar
  • 1/2 tsp salt (adjust to taste)
  • 1 tbsp cooking oil
  • 1 tsp sesame oil (optional)
  • Chopped scallions (for garnish)

Instructions:

  1. Prepare Bamboo Shoots:
    • If using fresh bamboo shoots, boil them first for 10-15 minutes to remove bitterness.
    • If using canned, rinse well and drain.
  2. Stir-Fry:

  4. Add minced garlic and dried chilies (if using), stir until fragrant (~30 sec).
  5. Add bamboo shoots and stir-fry for 2-3 minutes.

  7. Continue cooking for another 2-3 minutes until tender but still crisp.
  8. Drizzle with sesame oil (optional) and garnish with scallions.
